Natural winemaking legend Toni Carbó from La Salada has teamed up with the Nuria Renom, known for her work at Bar Brutal in Barcelona, to create this Pet Nat.
This special wine blends half of Toni’s fruit with half from Nuria, showcasing the best of both plots!
The Macabeu grapes were destemmed and allowed to macerate for four days before undergoing fermentation in stainless steel to achieve a fully dry profile. Meanwhile, the later-ripening Parellada grapes were gently pressed, and their juice was added to the Macabeu. After being bottled, this wine aged for 10 months on the lees, only to be disgorged before dispatch.
