Patu+Salto

On the border between Portugal and Spain, Bar Salto is the first natural wine bar in Extremadura. Built on an old smuggling trail, it’s a space for gathering, sharing, and tasting what this land has to offer.

Chef Gino Marengo creates vibrant, plant-based dishes that change with the season: colourful, nourishing, and made to share. Everything is full of flavour, and good for both body and planet.

We pour low-intervention wines, hand-selected from local, national, and a few international producers. You’ll always find bottles from São Mamede and Extremadura. We love wines that are fresh, wild, and born just a few kilometres away.

We work towards a low-waste and value nature by composting, sourcing responsibly, and offering free filtered water instead of bottled water.

We do casual. We do flavour. Perfectly shared amongst friends and always best with a glass in hand.
