Winemaking:
The process begins with crushing grapes by foot, and skin contact for 8 hours. After that, the whole bunches are gently pressed in a vertical press to ensure the best flavors are extracted. Finally, the cloudy must ferments in 700-litre chestnut barrels, previously used for Manzanilla and Amontillado wines.
